Rawley Resort celebrates 100 years with restaurant makeover and new menu by chef Chris Locke

Rawley Resort, Spa & Marina knows how to throw a party. In honour of its 100th anniversary, the Port Severn resort is flaunting a restaurant makeover, has a new celeb chef partner, and is giving away goodies to its nearest and dearest. One of Georgian Bay’s most stunning retreats, Rawley is known for its waterside lofts, full-service spa, outdoor pool, and red cedar barrel sauna overlooking the bay. Its redesigned Lighthouse45 Restaurant, fresh menu by renowned chef Chris Locke, and four exclusive summer packages are sure to make it this season’s hottest destination.

If Rawley Resort feels lively of late, it may be thanks to chef Chris Locke. Formerly of Marben, one of Toronto’s most beloved farm-to-table restaurants, Locke has created a menu of dishes for Lighthouse45 inspired by his devotion to seasonal, locally-sourced fare. Launching on June 8th, the new menu reflects months of research, new relationships with local farms, wineries, suppliers, and more, and a team well-versed in the restaurant’s new direction. “Rawley is such a beautiful resort in such a stunning part of the province,” said Locke, in a press release.  “When I was presented with the opportunity to recreate the Lighthouse45 menu with a local flavour and a focus on sustainability, I jumped at it. I can’t wait for guests to experience what we’re dreaming up!”

Standouts on the new menu include Potato, Sour Cream and Onion, made with organic potatoes from Cookstown Greens, high welfare Heritage Pork Chop and White Pine Crème Caramel, a dish that salutes one of Ontario’s most symbolic and abundant evergreens.

Sample chef Locke’s complete menu as you take in the entire Rawley experience, with four new packages for families, couples and girls getaways. Book a one- or two-night stay and enjoy a 3-course dinner for two with the Dine and Dream package. The Sips, S’mores and Spa package features the delightful combination of foot rituals at the spa, followed by s’mores under the stars.
