Baklava Ice Cream Sandwich

Ingredients

  • 2 cups vanilla ice cream

  • 1/3 cup chopped pistachios

  • 1/3 cup chopped almonds

  • 2 tablespoons rose water (divided)

  • 7-8 layers of phyllo dough

  • 1/4 cup melted butter

  • 1/4 cup ground pistachios

  • 1/3 cup granulated sugar

  • 1/3 cup water

  • 1/2 teaspoon saffron

Directions

Ice Cream

  • Step 1

    In a mixing bowl, combine the vanilla ice cream, chopped pistachios, almonds, and 1/2 of the rose water. Stir until well combined.

  • Step 2

    Spread the ice cream mixture onto a baking sheet lined with parchment paper, creating a 1/4-inch thick layer.

  • Step 3

    Freeze the ice cream layer for 2-3 hours, or until firm.

Phyllo Dough Layers

  • Step 1

    Preheat the oven to 350°F.

  • Step 2

    Lay out a sheet of phyllo dough on a clean surface. Brush melted butter over the entire sheet of phyllo dough.

  • Step 3

    Place another sheet of phyllo dough on top and brush with melted butter.

  • Step 4

    Repeat this process until you have a stack of all sheets of phyllo dough.

  • Step 5

    Using a sharp knife, cut the layered phyllo dough into 2-inch squares until you have 12-15 squares.

  • Step 6

    Place the prepared phyllo dough squares on a baking sheet lined with parchment paper.

  • Step 7

    Sprinkle ground pistachios over the top of each square.

  • Step 8

    Bake in the preheated oven for 15 to 20 minutes or until the dough turns golden brown.

  • Step 9

    Remove from the oven and let them cool completely.

Rosewater Syrup

  • Step 1

    In a small pot over medium heat, add the water, sugar and saffron. Bring to a simmer and let cook for about 2-3 minutes. Turn off the heat and add the rosewater. 

  • Step 2

    Set aside and let it come to room temperature. 

Assembly

  • Step 1

    Cut the ice cream with a sharp knife into 2 inches squares. 

  • Step 2

    Place the ice cream square between the stacked layers of phyllo dough. 

  • Step 3

    Pour the syrup on top and enjoy!
