
Beast, king of comfort food, is known for doling out decadent plates of fried chicken sandwiches smothered in gravy, fried gnocchi with ragu and bone marrow with snail marsala.
The restaurant, like many others, has shut its doors due to COVID-19, leaving many of us missing hearty brunches at the King West outpost. If you're looking to bring a little comfort into your home, make these warm and buttery parker house rolls, thanks to Beast's original recipe.

Step 1
In a stand mixer, mix first 7 ingredients on low with dough hook for 4 minutes.

Remove from bowl and flatten dough by hand on a lightly floured surface.

Cut pieces with a bench scraper or tear with hands and weigh out to 31-34 grams.

Roll by hand into smooth balls.

Step 5
Using a meatloaf pan or similar baking pan, spray with nonstick. 10 balls to a pan. Place in pan and brush soft butter on top, cover and place in a warm spot (inside a turned off oven with light on). Proof until double in size. Bake in a convection at 400 degrees Fahrenheit for 15 minutes.
