Method

Sweet Bread 7 Steps

  • Step 1

    Place all dry ingredients into your mixer and mix on low speed.

  • Step 2

    Add butter, milk and eggs and mix at medium speed (6-7 minutes). Switch to high speed until dough no longer sticks to the sides of the bowl.

  • Step 3

    Leave to sit in a bowl for 45 minutes covered with a damp cloth.

  • Step 4

    Cut the dough into 4oz to 6oz pieces. Knead the dough to remove extra air, (test consistency of dough with "window effect"). Let balls sit for 15 minutes.

  • Step 5

    Proof and place on baking sheet.

  • Step 6

    Brush with egg wash and top with a generous amount of sugar on top.

  • Step 7

    Bake at 345 degrees Fahrenheit for 25 minutes.

Ingredients

Sweet Bread

  • 2 lbs. (907g) strong white flour

  • 4 oz. (113g) white sugar (extra for topping)

  • A pinch (0.36g) of salt

  • 100g unsalted butter

  • 2 large eggs

  • 250ml 2% milk

  • 1 1/2 oz (43g) fresh yeast

  • 1 whole orange zest

  • 1 tsp rum flavouring

  • 1 tsp lemon or orange flavouring
