Breakfast Tacos

Ingredients

Homemade Salsa

  • 2 tomatoes, halved

  • 1 jalapeño pepper (seeds removed for less heat)

  • 1/2 white onion, cut into chunks

  • 3 cloves garlic

  • 1/2 cup cilantro

  • Juice of 1 lime

  • Salt and pepper, to taste

Pickled Red Onion

  • 1 red onion, thinly sliced

  • 1/2 cup apple cider vinegar

  • 1 tablespoon sugar

  • 1 teaspoon salt

  • 1/2 cup warm water

Tacos

  • 6 small tortillas

  • 3 large eggs

  • 6 slices of bacon

  • 1/4 cup feta cheese, crumbled

  • Pickled red onion (see recipe)

  • Fresh cilantro

  • Lime

  • Sliced avocado 

  • Salsa (see recipe)

Homemade Salsa

  • Step 1

    Set the oven broiler on high.

  • Step 2

    Place the tomatoes, jalapeño pepper, onion and garlic on a baking sheet.

  • Step 3

    Broil the vegetables for about 5-7 minutes until slightly charred.

  • Step 4

    Remove from the broiler and let them cool.

  • Step 5

    In a blender or food processor, combine the broiled vegetables, cilantro, lime juice, salt and pepper. Pulse until desired consistency is reached. Adjust the seasoning if needed.

Pickled Red Onion

  • Step 1

    In a small bowl, combine apple cider vinegar, sugar, salt and warm water. Stir until the sugar and salt dissolve.

  • Step 2

    Place the thinly sliced red onion in a jar or bowl and pour the pickling liquid over it.

  • Step 3

    Let it sit at room temperature for at least 30 minutes, or refrigerate for a couple of hours for stronger flavour.

  • Step 1

    Cook the bacon in a skillet over medium heat until crispy. Remove from the skillet and drain on a paper towel.

  • Step 2

    In a non-stick pan, fry the eggs sunny-side-up until the whites are cooked and the yolks are still runny.

  • Step 3

    Warm the tortillas in a dry skillet or in the oven.

  • Step 4

    To assemble each taco, place two tortillas on a plate. Top each with one sunny-side-up egg, bacon, feta cheese, some pickled red onion and fresh cilantro.

  • Step 5

    Serve with fresh limes, sliced avocado and homemade salsa on the side and enjoy!
