Crispy Croissant Butter Tart Ice Cream Sandwich

  • 2 croissants (day-old croissants are great for this!)

  • 2 tbsp unsalted butter

  • 2 tbsp maple syrup

  • Chapman's Butter Tart Ice Cream

  • Step 1

    Prepare the Croissants:

    Using a rolling pin or heavy bottom pan, gently flatten the croissants as flat as possible, being careful not to tear the layers.

  • Step 2

    Toast the Croissants:

    Heat a large non-stick skillet over medium heat. Add the butter and let it melt and foam. Place the flattened croissants in the pan, drizzle lightly with maple syrup, and cook for 2-3 minutes on each side until they turn golden brown and crispy. Use a heavy bottom pan to weigh down croissants as they toast, to keep them flat and maximize contact on the pan for even toasting.

  • Step 3

    Assemble the Sandwich:

    Remove the croissants from the pan and let cool slightly. Place one toasted croissant on a plate, and add 2-3 generous scoops of Chapman’s Butter Tart ice cream on each. Top with the remaining croissant to form sandwiches.

  • Step 4

    Serve Immediately:

    Drizzle additional maple syrup over the sandwiches if desired, and serve immediately for the perfect warm-and-cold contrast.
