Crispy Croissant Butter Tart Ice Cream Sandwich

There is no sweet treat more Canadian than the Butter Tart. This flakey and buttery pastry filled with a delicious caramel filling is the ultimate treat for any occasion! If you’re like us, you’ll be pleased to hear that the legendary Canadian ice cream maker Chapman’s has created a perfect butter tart ice cream that is sure to satisfy your butter tart hankerings all summer long!
While this delicious ice cream can most definitely be enjoyed on its own, we decided to try it with a version of the viral crispy croissant sandwich, and it might just be our favourite dessert currently.

Step 1
Prepare the Croissants:
Using a rolling pin or heavy bottom pan, gently flatten the croissants as flat as possible, being careful not to tear the layers.
Step 2
Toast the Croissants:
Heat a large non-stick skillet over medium heat. Add the butter and let it melt and foam. Place the flattened croissants in the pan, drizzle lightly with maple syrup, and cook for 2-3 minutes on each side until they turn golden brown and crispy. Use a heavy bottom pan to weigh down croissants as they toast, to keep them flat and maximize contact on the pan for even toasting.
Step 3
Assemble the Sandwich:
Remove the croissants from the pan and let cool slightly. Place one toasted croissant on a plate, and add 2-3 generous scoops of Chapman’s Butter Tart ice cream on each. Top with the remaining croissant to form sandwiches.
Step 4
Serve Immediately:
Drizzle additional maple syrup over the sandwiches if desired, and serve immediately for the perfect warm-and-cold contrast.
