Ingredients

Homemade Noodles

  • 300 grams flour

  • 3 eggs

  • 30 mL neutral oil

  • 2 grams salt

Spicy Sate Sauce

  • 2 tablespoons sate sauce

  • Pinch of salt

  • 10 grams sugar

  • 2 tablespoons oyster sauce

  • 1 tablespoon soy sauce

  • 1 tablespoon vinegar

  • Pepper

  • 2 green onions, thinly sliced on a bias

Homemade Noodles With Vietnamese Sate Sauce

8 Steps

  • Step 1

    Mix all ingredients for the dough together in a large bowl.

  • Step 2

    Dust a clean work surface with flour, knead until the dough is smooth and elastic.

  • Step 3

    Roll the dough into thin sheets that can be divided into many small pieces so that it is easier to roll if you roll by hand, but if you have a rolling machine, use it, it will save a lot of time and effort.

  • Step 4

    Fold the sheet of dough into thirds like a letter and cut the dough into thin strips (1/4 of an inch). Pull noodles strand apart and dust the noodles with flour to prevent the dough from sticking.

  • Step 5

    Boil noodles in a large pot of boiling salted water until al dente and drain.

  • Step 6

    Mix together ingredients for spicy sate sauce in a small bowl (except the green onions).

  • Step 7

    Heat neutral oil in a pan and stir on the stove with green onions. Then take out the onions and stir in the spicy sate sauce

  • Step 8

     Add the drained fresh noodles and stir to absorb the seasoning. Add back fragrant onions and a little pepper and enjoy.
