Bringing the craft back to its roots, Roberts and Woolston want drinkers to pay closer attention to the main component behind kombucha—the tea.

Although there’s a bit of passionfruit in every bottle to enhance tartness and tropical notes, Silver Swallow’s kombuchas are unlike the flavoured ones you find in grocery stores. Instead, their focus is on the varietal and terroir of tea, much like the wine-appreciation culture.
