Famed Miami chef bringing two virtual restaurant concepts to Toronto

Toronto is getting two new virtual restaurant concepts from a Miami-based chef, Michael Lewis.

'Laid Fresh' and 'Chikin' are the two restaurants that are opening their first joint locations in Toronto, by way of the REEF Neighbourhood Kitchens (NBRHD) network. Laid Fresh is an egg-focused, all-day breakfast restaurant that serves up an array of egg-forward sandwiches and meals. Chikin, which originally launched in Montréal, is a fast-casual eatery centred around Korean-style fried chicken items.

The two restaurants will operate out of a NBRHD kitchen and will be available through popular meal-delivery apps. Both menus will be available to order for 18 hours a day from 9 a.m. to 3.a.m.

As the pandemic continues to roar, more ghost kitchen concepts continue to sprout up as takeout and delivery remain the only viable options for dining out. Ghost kitchens provide a kitchen space to different food concepts and bundle them with others to offer a 'one-stop-shop' restaurant to order from online. While controversial, ghost kitchen concepts continue to sprout up across the city.

NBRHD Kitchens has ramped up their offerings in the past month, introducing multiple US-based concepts to their Toronto kitchens, including the viral MrBeast Burger and San Francisco-based pop-up Man vs. Fries.

Laid Fresh and Chikin will be available for delivery through popular apps in Toronto beginning Feb. 26.
