Cilantro Lime Chicken with Mango Salsa

Method

Mango Salsa 1 Steps

  • Step 1

    Add all mango salsa ingredients to a large bowl. Toss to evenly combine. Taste and add additional jalapeñossalt or lime juice. For best flavour, chill salsa in the refrigerator for 30-60 minutes.

Chicken 3 Steps

  • Step 1

    Whisk together 2 tablespoons oil, lime juice, cilantro, garlic, cumin and red pepper flakes. Add chicken and toss to coat. Let marinate in the fridge for 30 minutes and up to 2 hours. Make mango salsa while the chicken is chilling.

  • Step 2

    In a large ovenproof skillet over medium-high heat, heat the remaining 2 tablespoons oil. Sear both sides of chicken on high then reduce heat and cook for about 5-10 minutes until done.

  • Step 3

    Serve with mango salsa, rice or any other side of choice.

Chicken

  • 4 tablespoons extra-virgin olive oil, divided

  • Juice from 2 limes

  • 1/4 cilantro, chopped

  • 2 garlic cloves, minced

  • 1/2 teaspoon cumin

  • Pinch of crushed red pepper flakes

  • 4 boneless skinless chicken thighs

  • Kosher salt

  • Freshly ground black pepper

Mango Salsa

  • 3 mangos, small dice

  • 1 red bell pepper, small dice

  • 1/3 cup red onion, small dice

  • 1-3 jalapeños seeded, deveined, minced (1 for very mild)

  • 1/3 cup cilantro (loosely packed), chopped

  • 1/2 teaspoon garlic powder (or 2 finely minced garlic cloves)

  • 1/4 teaspoon ground cumin

  • 1/4 teaspoon salt

  • 1/8-1/4 teaspoon black pepper

  • 3 tablespoons lime juice

  • 1 tablespoon apple cider vinegar
