Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking dish and set aside.

In a large pot, bring water to a boil. Add a pinch of salt to the boiling water and then add the macaroni. Cook the macaroni according to the package instructions until it's al dente. Drain and set it aside.

In a bowl, combine the evaporated milk, beaten eggs, hot sauce, Dijon mustard, salt, and black pepper. Whisk the mixture until it's well combined.

In a large bowl, add the cooked macaroni, egg mixture and 2 cups of the cheese. Gently fold the cooked macaroni into the cheese mixture until the macaroni is evenly coated.
