Ingredients

Brussel Sprouts

  • 225g Brussel sprouts

  • 30g double smoked bacon, cut into lardons

  • 75ml maple balsamic vinaigrette (recipe below)

  • Zest of one lemon

  • 20g Grano Padano

  • Canola oil, enough for deep fryer or deep pot

Maple Balsamic Vinaigrette

  • 50ml of maple syrup

  • 25ml of reduced balsamic

6 Steps

  • Step 1

    Cut stems of Brussel sprouts and cut in half.

  • Step 2

    To make the maple balsamic vinaigrette, combine 50ml of maple syrup and 25ml of reduced balsamic.

  • Step 3

    In a shallow pot or deep fryer, fry the Brussel sprouts and double smoked bacon at 350 degrees Fahrenheit, until golden brown.

  • Step 4

    Transfer Brussel sprouts into a bowl and season with salt and pepper.

  • Step 5

    Add maple balsamic vinaigrette and toss until well coated.

  • Step 6

    Transfer Brussel sprouts to a serving dish and grate lemon zest and Grano Padano on top as desired.
