Spicy Vodka Sauce Beans on Toast 3 Steps

  • Step 1

    In a large pot or Dutch oven, heat up 1/4 cup olive oil over medium heat, add shallot and cook for 4 minutes, season with salt and pepper. Add garlic and chili flakes, cook for 1 minute, stirring.

  • Step 2

    Add tomato paste and cook for 5 minutes or until a brick red colour begins to develop. Add vodka and cook for 2 minutes or until evaporated. Stir in heavy cream and cook for 5 minutes. Add beans, unsalted butter and Parmesan, adjust consistency with a few tablespoons of water if needed.

  • Step 3

    Toast sourdough, top with beans, additional chili flakes, basil and flaky salt. Serve!

  • 1 small shallot, finely chopped

  • 2 garlic cloves, minced

  • 1/2 cup tomato paste

  • 2 tablespoons vodka

  • 1 cup heavy cream

  • 1 teaspoon Sunspun chili flakes

  • Kosher salt, to taste

  • Black pepper, to taste

  • 1 can royal corona beans, drained and rinsed

  • 2 slices sourdough

  • Basil, chiffonade

  • 2 tablespoons unsalted butter

  • Parmesan, grated
