Flourless Chocolate Pear Cake 10 Steps

    Preheat the oven to 350°F and line a 9-inch cake pan with parchment paper.

    Whisk the egg whites and brown sugar with a stand mixer until stiff peaks form. Set aside.

  • 120 grams dark chocolate

  • 130 grams unsalted butter

  • 2 tablespoons instant coffee (dissolved in 1 tablespoon of hot water)

  • 100 grams ground almonds

  • 1 tablespoon cocoa powder

  • 1/2 teaspoon salt

  • 1/8 cup slivered almonds

  • Icing sugar (for dusting)

  • 2 pears (sliced thinly)
